Black Bean Veggie Bowl with Guacamole
Serves 2
Ingredients
1 can black beans, rinsed and drained 1/2 cup water or broth
1 tsp coconut oil
1 cup broccoli
1 zucchini, sliced
1 cup cabbage, shredded
1/2 red bell pepper
1/2 avocado
fresh lime juice to taste
salsa to taste
sea salt to taste
Instructions
Add black beans and liquid to a pan and bring to a simmer, warm through for about 5 minutes.
Add oil to a pan over medium heat. Add veggies, season with salt, and sauté for 5-8 minutes, until tender.
While veggies are cooking, mash up your avocado in a small bowl. Use a fork or a potato masher and sprinkle with a little salt and lime juice.
To serve, layer ingredients in a bowl. Start with beans, then veggies, then salsa and guacamole.
Optional - add additional protein of choice like chicken, beef, or fish would all go well.
