Black Bean Veggie Bowl with Guacamole

Serves 2

Ingredients

  • 1 can black beans, rinsed and drained 1/2 cup water or broth

  • 1 tsp coconut oil

  • 1 cup broccoli

  • 1 zucchini, sliced

  • 1 cup cabbage, shredded

  • 1/2 red bell pepper

  • 1/2 avocado

  • fresh lime juice to taste

  • salsa to taste

  • sea salt to taste

Instructions

  • Add black beans and liquid to a pan and bring to a simmer, warm through for about 5 minutes.

  • Add oil to a pan over medium heat. Add veggies, season with salt, and sauté for 5-8 minutes, until tender.

  • While veggies are cooking, mash up your avocado in a small bowl. Use a fork or a potato masher and sprinkle with a little salt and lime juice.

  • To serve, layer ingredients in a bowl. Start with beans, then veggies, then salsa and guacamole.

  • Optional - add additional protein of choice like chicken, beef, or fish would all go well.
